The Holiday Drink – How to Make It

WHere is an easy version of a cocktail from the seasonal drinks list. Designed as a large-volume pre-mixed which is loaded with flavours of a festive period, which makes it ideal for hosting a festive gathering. Reserve the remaining syrup for morning drinks, sweets, or to mix more rounds of the drink.

The Bikini Cocktail

Yields 10 servings

Ingredients for the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Cocktail (yields 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

To prepare the Citrus Syrup: Put all the ingredients in a pan, bring to a gentle boil, stirring to dissolve. After that, take off the heat allowing it to cool entirely. Pour into a sealable bottle, cap it and store in the fridge, where it will keep for around one month.

For the Premix: Mix the specified liquid ingredients in a sizeable container, allow it to infuse for an hour, then filter it , ideally through cheesecloth, so it's completely strained.

For serving: Add 85ml of your cocktail base into a mixing glass packed with ice, gently stirring lightly for about 60 seconds to cool it down. Strain into a chilled martini glass or equivalent, decorate with the cranberries and complete it by giving it a light spray with the mandarin essence over the drink.
